Sausage, Bean And Kale Stew
- 2 Tablespoons Olive Oil
- 2 cloves Garlic, Minced
- 1 whole Yellow Onion, Diced
- 8 ounces, weight Italian Sausage, Chopped
- 1 can (14.5 Oz. Can) Diced Tomatoes
- 1 can (15 Oz. Can) White Beans (rinsed)
- 32 ounces, fluid Chicken Broth
- 3 dashes Salt, Pepper, & Crushed Red Pepper (to Taste)
- 6 cups Kale, Chopped (spinach & Mustard Greens Are Good Substitutes)
- Saute the garlic and onion in the olive oil until soft and fragrant.
- Add sausage and cook until browned and heated through.
- Add tomatoes, beans, broth, and seasonings.
- Bring to a boil and start adding kale one small bunch a time.
- The kale will begin to wilt down and you can keep adding more until it's all in.
- Turn heat down and simmer for about 15 - 20 minutes.
- Serve with grated asiago or parmesan and crusty bread. ENJOY!
