Sweet Onion Casserole
- 6 c. chopped Vidalia sweet onions
- 1/4 c. chopped bell pepper (optional)
- 4 Tbsp. cooking oil or margarine
- 3 c. grated Cheddar cheese
- 1 1/2 c. heavy cream
- 1 egg plus 2 yolks
- 1 Tbsp. chopped pimento (optional)
- 1 tsp. seasoned salt
- paprika as garnish
- Preheat oven to 400u0b0.
- Saute onions and bell pepper in cooking oil for 15 minutes on medium-low heat.
- Place half of grated cheese in 2-quart casserole dish.
- Top with saute and pepper.
- Add remaining cheese on top of onions and pepper.
- Combine heavy cream (unwhipped), eggs, pimento and salt to make a sauce.
- Pour sauce over cheese and onions.
- Sprinkle paprika as a garnish.
- Bake in 400u0b0 oven for 10 minutes, lower heat to 325u0b0 and bake 25 minutes. Makes 8 servings.
