Strawberry Bread With Lemon Icing
- FOR THE BREAD:
- 2 cups Fresh Strawberries, Roughly Chopped
- 1-1/2 cup All-purpose Flour
- 3/4 cups Granulated Sugar, Plus Extra To Sprinkle On Strawberries
- 1/4 cups Light Brown Sugar
- 2 teaspoons Cinnamon
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/2 cups Canola Oil
- 2 whole Eggs, Lightly Beaten
- 1 teaspoon Vanilla Extract
- FOR THE ICING:
- 1/2 cups Confectioners Sugar
- 3 Tablespoons Fresh Lemon Juice
- Place strawberries in a strainer or colander, and sprinkle with a few tablespoons of granulated sugar. Let sit for 15 minutes.
- Preheat oven to 375u0b0F. Grease and flour a 9x5 inch bread pan.
- In a large mixing bowl, combine flour, sugar, brown sugar, cinnamon, baking soda, and salt. In a separate bowl, whisk together oil, eggs, and vanilla extract. Stir in strawberries. Pour wet mixture into flour mixture, and stir to combine. Do not overmix.
- Pour batter into prepared loaf pan. Bake for 45 minutes, or until a toothpick inserted into middle of loaf comes out clean. Remove from oven and let cool before removing from pan.
- To make the icing, whisk together lemon juice and confectioner's sugar until all lumps disappear. Add more or less lemon juice depending on how thick/thin you like your icing. Spread icing on cooled loaf, or create a pretty design on top. Enjoy!
