Peanut Butter Cookies
- vegetable oil spray
- 1/2 c. low-fat margarine
- 1/2 c. sugar
- 1/2 c. firmly packed brown sugar
- 1 c. unsalted peanut butter
- 1/2 tsp. vanilla
- 1 1/2 c. all-purpose flour
- 1 1/4 tsp. baking powder
- Preheat oven to 350u0b0.
- Lightly spray a cookie sheet with vegetable oil spray.
- In a large mixing bowl, cream the margarine and sugars.
- Stir in egg.
- Add peanut butter and vanilla; beat.
- In a medium bowl, sift flour and baking powder together.
- Add to margarine mixture and mix well.
- Form dough into 1 1/2-inch balls and place 3-inches apart on prepared cookie sheet.
- Flatten with a fork.
- Bake 15 minutes or until done.
- Allow cookies to cool 2 to 3 minutes on cookie sheet before transferring to cooling rack.
