Ground Beef And Veggie Soup
- 2 pounds Ground Beef
- 1 whole Small, Sweet Onion, Chopped
- 2 pounds Baby Carrots, Cut In Half
- 3 pounds Potatoes, Peeled And Cubed
- 1 can (15 Oz. Can) Cut Green Beans
- 1 can (15 Oz. Can) Tomato Sauce
- 4 cubes Beef Bouillon
- 2 Tablespoons Sugar
- 1 Tablespoon Salt, Or To Taste
- 1/2 teaspoons Ground Black Pepper
- 1 envelope (0.87 Oz. Packet) Brown Gravy Mix
- In a large stock pot, brown ground beef and onion and drain off fat. Add carrots, beef bouillon cubes and enough water to fill up the pot halfway. Bring to a boil, then turn down to medium and simmer for 25 minutes. Add potatoes, green beans, tomato sauce, sugar, salt and pepper and more water if needed. Bring back to a simmer and cook for another 25 minutes. Blend brown gravy mix with 1/4 cup of water and add to the soup during the last 5 minutes of cooking time. Serve with saltine crackers or corn bread.
