Butterscotch Fudge

  1. Line an 8-inch square pan with foil.
  2. Spread 1/2 cup walnuts evenly on bottom of pan.
  3. Set aside.
  4. In heavy gauge saucepan, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to full rolling boil over moderate heat, stirring constantly. Boil 5 minutes, stirring constantly.
  5. Remove from heat.
  6. Add butterscotch flavored morsels; stir until morsels are melted and mixture is smooth.
  7. Stir in orange extract and orange rind.
  8. Pour into prepared pan.
  9. Sprinkle remaining 1/2 cup walnuts on top. Chill until firm (about 2 hours).
