Smoked Cheddar Muffins

  1. In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper.
  2. In another bowl, beat together eggs, milk, and melted butter.
  3. Add to flour mixture. Add the 1 cup shredded cheese and stir just till batter is smooth (do not overbeat).
  4. Spoon batter into greased muffin cups, filling cups almost full.
  5. Top with desired toppings.
  6. Bake in a 425u0b0 oven for 12 to 15 minutes or till golden brown.
  7. Let cool in pan for 5 minutes.
  8. Remove from muffin cups and serve warm.
  9. Makes 12 muffins.
