Smoked Cheddar Muffins
- 1 c. all-purpose flour
- 1 c. yellow cornmeal
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1/4 to 1/2 tsp. ground red pepper
- 2 eggs
- 1 c. milk
- 1/4 c. butter, melted
- 1 c. shredded smoked Cheddar cheese
- Toppings: sunflower seeds, poppy seeds, pine nuts, or additional shredded smoked Cheddar cheese
- In a medium mixing bowl stir together flour, cornmeal, sugar, baking powder, salt, and red pepper.
- In another bowl, beat together eggs, milk, and melted butter.
- Add to flour mixture. Add the 1 cup shredded cheese and stir just till batter is smooth (do not overbeat).
- Spoon batter into greased muffin cups, filling cups almost full.
- Top with desired toppings.
- Bake in a 425u0b0 oven for 12 to 15 minutes or till golden brown.
- Let cool in pan for 5 minutes.
- Remove from muffin cups and serve warm.
- Makes 12 muffins.
