Strawberry Fool

  1. 1. Put strawberries in the blender and then add 10 packets sugar equivalent/sweetener. You want it fairly sweet. (I use my hand chopper and keep the fruit rough chopped, not pureed.)
  2. 2. In a large bowl, whip cream with vanilla and remaining 10 packets of sugar equivalent.
  3. 3. For a nice presentation, put a tablespoon of strawberry mixture in the bottom of a martini glass or clear dessert dish.
  4. 4. Fold the rest of the fruit mixture in with the whipped cream, but don't mix it too well. You want to have wide streaks of red and various shades of pink throughout.
  5. 5. Spoon into dessert dishes and garnish with a few extra slices of strawberries.
  6. Note: You can also substitute raspberries for the strawberries and if you want to get ultra-fancy, you can run the raspberry mixture through a strainer to take out the seeds-but it isn't necessary!
