Strawberry Golden Oreo Cupcakes
- 1 package (about 18 Oz. Package) Golden Oreo Cookies
- 1 box (18.25 Oz. Box) Strawberry Cake Mix
- 1 cup Low-fat Buttermilk
- 1/3 cups Canola Oil
- 4 whole Eggs
- Vanilla Buttercream, To Frost The Cupcakes
- Fresh Strawberries, Slivered, To Garnish
- Preheat oven to 350u0b0F. Place half of a cookie, cream side up, in the bottom of your cupcake liner. Break about 24 of the remaining cookies into quarters and set aside.
- Combine cake mix, buttermilk, oil and eggs. Gently fold in the Oreos cookie pieces.
- Spoon batter into cupcake liners, filling them about 2/3 full. Bake approximately 20 minutes or until a toothpick inserted into the center comes out clean. Cool completely and then frost.
- I frosted mine with vanilla buttercream, sprinkled them with crushed Oreo cookies and a strawberry sliver on top.
