Sparkling Jello Salad
- 2 Tablespoons Cold Water
- 1 envelope (1/4 Oz. Size) Unflavored Gelatin
- 1 cup Orange Juice, Divided Use
- 3 Tablespoons Sugar
- 1 cup Ginger Ale
- 1/2 cups Canned Mandarin Oranges, drained
- 4 cups Fresh Strawberries Washed Hulled And Sliced
- 1/2 cups Fresh Raspberries, Washed
- Put the cold water in a small saucepan and sprinkle the gelatin over it. Let it stand for about 5 minutes while the gelatin absorbs the water. Then heat the gelatin mixture on low heat, stirring gently, until the gelatin dissolves. Add 1/4 of the orange juice and the sugar to the gelatin mixture. Still on low heat, stir gently until the sugar dissolves.
- Into a medium bowl, add the remaining 3/4 of the orange juice and the ginger ale. Stir in the gelatin mixture with a whisk. Pour the mixture into an 8 x 8 baking dish.
- Gently place the fruit in the gelatin mixture, evenly dispersing it all over the dish.
- Refrigerate the mixture until set, about 4-6 hours. Cut into squares to serve.
