Passover Chocolate Chip Mandel Bread
- 2 cups Sugar
- 2 sticks Unsalted Butter, At Room Temperature
- 6 whole Eggs
- 2-3/4 cups Matzo Cake Meal (See Note)
- 1 teaspoon Salt
- 3/4 cups Potato Starch
- 1 cup Semi-Sweet Chocolate Chips
- 1 cup Sliced Almonds, Or Your Favorite Nuts
- FOR THE TOPPING:
- 1 teaspoon Cinnamon
- 2 teaspoons Sugar
- Note: Matzo cake meal is typically available in the ethnic or Passover food aisle of well-stocked supermarkets.
- Preheat oven to 350u0b0F.
- Using either a stand or hand mixer, cream sugar and butter together in a large bowl. Beat in eggs, one at a time.
- In a separate bowl, sift together cake meal, salt and potato starch. Fold into egg mixture. Stir in chocolate chips and nuts.
- Divide dough in half and form 2 loaves, approximately 2 to 3 inches high on a baking sheet lined with parchment paper. Loaves will neither rise nor spread in oven but I did find them very sticky to work with, so I used a bit of extra cake meal on my hands to pat them into shape.
- For the topping, combine cinnamon and sugar in a small bowl. Sprinkle evenly over loaves. Bake for 45 minutes. Allow to cool slightly but slice, with a serrated knife, while still warm.
