Breakfast Polenta
- 1 cup Polenta
- 3 cups Water
- 4 strips Bacon
- 4 pieces Sausage
- 1/2 whole Bell Pepper
- 5 whole Green Onions
- 1/4 cups Feta Cheese
- 1. Prepare polenta according to package directions. (Be sure to season with some salt and pepper as well!)
- 2. Meanwhile, cut bacon into small pieces and brown in a skillet with 1 tablespoon olive oil, on medium-high heat, until brown and crispy.
- 3. Remove the bacon and reserve for later.
- 4. Depending on your preference, you can either clean the pan and use 1 tablespoon olive oil, or you can cook the remaining veggies with a tablespoon of the bacon fat.
- 5. Add turkey sausage and bell pepper and saute until sausage is browned and cooked through. Add green onions, bacon, salt and pepper and saute for 5 more minutes.
- 6. Add polenta to the meat and vegetables and stir to combine. Slowly stir in feta. Serve warm.
