Meatball Stew
- 6 to 8 medium-size potatoes, peeled and cubed
- 1 lb. hamburger
- 1 tsp. dry mustard or 1 Tbsp. prepared mustard
- 1 tsp. chili powder
- 1/2 c. milk
- 1 egg
- 1/4 c. corn meal
- 1 tsp. salt
- 3 Tbsp. chopped onion
- 2 Tbsp. flour
- 1 can tomato soup or 1 c. tomato juice
- 1 c. chopped onion
- Cook potatoes while preparing other ingredients. Combine hamburger, mustard, chili powder, milk, egg, corn meal, salt and 3 tablespoons chopped onion. Mix well and form into meatballs. Roll in flour and brown in 3 tablespoons oil. Remove from oil and set aside. Thicken remaining fat in skillet with 2 tablespoons flour and add tomato soup or juice to make gravy. Add drained cubed potatoes and 1 cup chopped onion. Let simmer 1 minute. Add meatballs. Let simmer until done or layer in casserole dish and bake at 350u0b0 until done.
