Tuna Noodle Skillet
- 12 1/2 oz. can tuna
- 1 can cream of chicken soup
- 1/2 c. finely crushed saltines
- 2 Tbsp. chopped onion
- 2 Tbsp. parsley flakes
- 1 Tbsp. lemon juice
- 1 egg, beaten
- 2 c. cut broccoli, cooked
- 2 Tbsp. butter or margarine
- 1/2 c. sour cream
- 1/2 c. milk
- 3 c. cooked medium noodles
- 2 Tbsp. grated Parmesan cheese
- Combine tuna, 1/4 cup soup, cracker crumbs, onion, parsley, juice and egg.
- Mix well.
- Shape into 4 patties 1-inch thick. Brown in hot butter in skillet.
- Remove from pan.
- Combine remaining soup, sour cream and milk.
- Stir until smooth.
- Stir in noodles, cheese and broccoli.
- Arrange tuna patties over noodles. Cover and cook 10 minutes.
- Serves 4.
