Strawberry “Mojito” Agua Fresca
- 1 pint Strawberries, Hulled And Sliced
- 1 whole Lime, Juiced
- 1 Tablespoon Fresh Mint Leaves
- 1/4 cups Superfine Sugar
- 2 cans (12 Oz. Can) Plain Or Lime Seltzer Water, Chilled
- Hull strawberries and slice in half. Add strawberries, lime juice and mint to a blender and process until smooth. Add superfine sugar and process until well blended. Pour into a fine mesh strainer placed over a small bowl and using a rubber spatula, gently press the fruit until all the puree is extracted and seeds are all that remain in the strainer.
- In a pitcher, combine strawberry puree and the seltzer water, stirring gently to blend well. Serve in your favorite pretty glass (add ice if desired), kick back, put your feet up, and enjoy!
- Note: superfine sugar is easy to make, no need to purchase it! If you have a food processor, simply whirl regular sugar until it is very finely ground.
