Strawberry Muffins
- 1/3 cups Butter, Melted
- 1 cup Vanilla Yogurt
- 1 cup Strawberry Preserves
- 1 Tablespoon Orange Juice
- 1 teaspoon Vanilla Extract
- 1 whole Egg
- 1-3/4 cup All-purpose Flour
- 3/4 cups Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/4 teaspoons Salt
- Combine the first 6 ingredients in a small bowl (butter, yogurt, strawberry preserves, orange juice, vanilla, egg). In a large bowl, combine the dry ingredients. Stir the wet ingredients into the flour mixture and mix until well combined. Coat a muffin pan with non-stick cooking spray and fill muffin cups 2/3 full. Bake at 400 degrees for 15 to 18 minutes or until muffins are lightly browned and a wooden pick inserted comes out clean. Remove muffins to a wire rack to cool. Yield: 18 muffins.
