Easy Enchilada Casserole
- 1 c. chopped onion
- 1 clove garlic, minced
- 2 Tbsp. oleo
- 2 lb. ground beef
- 2 cans cream of mushroom soup
- 1 can tomato sauce
- 1 can tomato paste
- 2 or 3 cans diced green chiles
- 1 tsp. salt
- 3/4 lb. Longhorn or Cheddar cheese, shredded
- 1 small pkg. tortilla chips, slightly crushed
- Saute onion and garlic in oleo.
- Remove from the pan, brown meat and drain.
- Stir in onion, garlic, soup, tomato sauce and paste, chiles and salt.
- Cook until mixture begins to boil.
- Place 3/4 of chips in bottom of a 9 x 13-inch or 10 x 10-inch pan.
- Pour meat mixture over chips.
- Top with remaining chips and cheese. Bake at 375u0b0 for 20 to 25 minutes.
- Serve with sour cream, if desired.
