Lemon Sugar Cookies With Lemon Glaze

  1. Preheat oven to 350 F. Line two baking sheets with parchment paper, set aside.
  2. In a large bowl using an electric mixer, cream together butter and sugar, scraping down the sides of the bowl when needed. Add egg, lemon extract and vanilla extract; beat until combined. Add lemon juice, salt, baking soda and baking powder; mix until combined. Add flour and mix until combined.
  3. Drop spoonfuls of dough onto the prepared baking sheet about 2" apart and bake for 8-10 minutes, until bottom is lightly browned. Refrigerate the dough between batches. Remove from oven.
  4. Let cookies cool on pan for 2 minutes, then move them to a baking rack to cool completely.
  5. For the glaze: In a bowl, add powdered sugar, lemon juice and lemon zest. Mix until combined. If you like it thicker add more powdered sugar; if you like it thinner, add more lemon juice. Drizzle glaze over cookies. I used the tines of a fork.
