Sesame Chicken And Noodle Salad(From First Immigrant Restaurant)
- 6 chicken breast halves, poached, skinned and torn into bite-size pieces
- 8 oz. Chinese noodles (mein) or spaghetti
- 1/2 red pepper, julienned
- 1/2 bunch green onions, chopped
- 1/2 green pepper, julienned
- 1/4 small head nappa or Chinese cabbage, julienned
- 8 dried shiitake mushrooms, soaked in warm water and julienned (remove stems)
- 4 oz. snow peas, strings removed and lightly blanched
- 1/4 c. chopped fresh basil
- 1/4 c. chopped cilantro
- 1 Tbsp. black sesame seed, toasted
- 1 Tbsp. white sesame seed, toasted
- 1/2 c. dry roasted peanuts
- salt and pepper to taste
- Cook noodles according to package directions.
- Combine chicken, noodles and remaining salad ingredients.
- Toss with dressing. Refrigerate and let marinate 1 hour or longer before serving.
