Italian Parmesan Potatoes
- 3 medium Russet potatoes, unpeeled and cut lengthwise into eighths
- 2 tsp. olive oil or oil
- 1/4 tsp. dried Italian seasoning
- 1/8 tsp. salt
- 1/8 tsp. garlic powder
- 1/8 tsp. paprika
- 2 to 3 Tbsp. grated fresh Parmesan cheese
- Heat grill. Cut 14-inch square sheet of heavy-duty foil. Place potatoes in center.
- In small bowl, combine oil, Italian seasoning, salt, garlic powder and paprika.
- Drizzle over potatoes.
- Stir gently to coat. Wrap and seal securely with tight double folds.
- Place foil packet on gas grill over medium heat or on charcoal grill 4 to 6-inches from medium-high coals.
- Cook 30 to 40 minutes or until potatoes are tender.
- Open packet.
- Stir gently.
- Sprinkle with cheese. Return to grill. Cook an additional 3 to 5 minutes or until cheese is melted. Serve immediately. Makes 4 servings.
