Matcha Baked Donuts With Matcha Glaze
- FOR THE DONUTS:
- 1-1/4 cup All-purpose Flour
- 1/2 cups Sugar
- 1/2 teaspoons Salt
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Matcha Green Tea Powder
- 2/3 cups Melted Coconut Oil
- 1/2 cups Lukewarm Milk
- 1 Large Egg, At Room Temperature
- 1/2 teaspoons White Vinegar
- 1 teaspoon Vanilla Extract
- FOR THE GLAZE:
- 1-1/2 cup Powdered Sugar, Sifted
- 3 Tablespoons Hot Water
- 1/2 teaspoons Matcha Green Tea Powder
- For the donuts:
- Preheat oven to 350u0b0F. Spray a donut pan with cooking spray. Set aside.
- In a bowl, mix together flour, sugar, salt, baking soda and matcha green tea powder. In a separate bowl, combine coconut oil, milk, egg, vinegar and vanilla.
- Mix wet and dry ingredients until combined. Do not over-mix. I suggest that you use a spatula, not a mixer.
- Transfer batter to a piping bag and squeeze into donut pan. Fill each slot 3/4 full. Bake donuts for 10-12 minutes. Cool donuts completely after baking.
- For the glaze:
- Mix powdered sugar, water and matcha powder together. Consistency needs to be thick; you can either add more powdered sugar or water to adjust it. Dip donuts into glaze, then line on a cooling rack, letting the excess drip onto the baking sheet.
- Notes: Make sure all ingredients are at room temperature. I used melted coconut oil and lukewarm milk. Vegetable oil could be used instead of coconut oil. Fill donut pan cavities 3/4 full.
