Strawberry Sandwich Cookies
- 1/2 cups Unsalted Butter, Softened, Divided Use
- 1-1/2 cup Boxed White Cake Mix
- 3-1/2 Tablespoons Strawberry Jello (dry Mix)
- 5 Tablespoons Milk, Divided
- 1 Egg
- 1/2 cups White Chocolate Chips
- 4 ounces, weight Cream Cheese, Softened
- 2 cups Powdered Sugar
- 4 Strawberries, Pureed With Jelly
- 1 Tablespoon Strawberry Jelly
- 1/2 teaspoons Vanilla
- Preheat oven to 350 F.
- For the cookies:
- In a medium size bowl, beat 1/4 cup butter with a mixer until smooth. Add cake mix, Jello mix, 2 tablespoons milk, and egg. Beat until combined. Stir in chocolate chips.
- Drop rounded tablespoons of batter on a parchment lined baking sheet, spacing them about 2 inches apart. Bake for 10 minutes, or until cookies are set.
- Remove pan from oven. Let cookies cool completely before adding the filling.
- For the filling:
- In a medium sized bowl, beat remaining butter and cream cheese until smooth. Add powdered sugar and continue beating until combined and smooth.
- Puree the strawberries and jelly together in a small food processor. Add the pureed strawberry and jelly mixture and vanilla into the cream cheese mixture. Add remaining 3 tablespoons milk a tablespoon at a time until you reach the desired consistency.
- To assemble cookies:
- Spread a layer of filling on the bottom side of a baked cookie. Add the second baked cookie and sandwich together. Repeat.
