Springtime Mixed Berry Salad
- 14 ounces, weight Mixed Baby Spring Greens
- 8 ounces, weight Strawberries, Cored And Sliced Thin
- 8 ounces, weight Blackberries
- 1/2 cups Gold Raisins
- 1/2 cups Extra Virgin Olive Oil
- 3 Tablespoons Balsamic Vinegar
- 1/2 teaspoons Dijon Mustard
- 1 dash Salt And Pepper
- 1/2 cups Sliced Almonds, Lightly Toasted
- 1/2 cups Feta, Crumbled
- 1. In a large mixing bowl, toss to combine the mixed greens, strawberries, blackberries and raisins. Set aside.
- 2. Make the dressing: In a small mixing bowl, add olive oil, balsamic vinegar, mustard, salt and pepper and whisk vigorously until completely combined.
- 3. Pour about half of the dressing over the salad mixture and toss to combine.
- 4. Sprinkle almonds and feta on top and drizzle with the rest of the dressing. Serve immediately.
