Blueberry Mint Margaritas
- 1/2 cups Lime Juice
- 1 cup Fresh Blueberries
- 2 Tablespoons Agave Nectar
- 1 Tablespoon Fresh Mint, Roughly Chopped
- 1 slice Lime
- 3 ounces, fluid Silver Tequila
- 1 ounce, fluid Triple Sec
- 2 Fresh Mint Sprigs, For Garnish (optional)
- 1/4 cups Sugar For Rim
- 1 dash Seltzer, If Desired
- Place lime juice, blueberries, agave and mint in a blender. Blend until smooth. Pour blueberry mixture through a sieve into a large glass. Press down on solids in the sieve to extract juice. Discard solids.
- Take a slice of lime and run it around the rim of two cocktail glasses. Place a little bit of sugar on a plate and dip moistened rim through the sugar to coat.
- Fill the two glasses with ice. In a large cocktail shaker add the blueberry mixture, tequila and triple sec. Shake well. Divide evenly between the two glasses. Top with a splash of seltzer and garnish with mint.
