Corn And Black Bean Salad
- 12 oz. can whole kernel corn
- 15 oz. can black beans, rinsed
- 1 bell pepper, diced
- 1 onion, diced
- 1/2 c. sliced green onion
- 1 clove garlic, minced
- 1 tomato, chopped
- 1 jalapeno pepper, chopped
- 3/4 c. fat-free Italian dressing
- 3/4 tsp. Tabasco sauce
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 1 Tbsp. red wine vinegar
- 1 Tbsp. fresh cilantro or parsley, chopped
- In a large bowl, combine corn, beans, onion, pepper, tomato and garlic.
- In a
- jar, combine Italian dressing, Tabasco sauce, chili, cumin, vinegar and cilantro. Cover and shake well. Pour over vegetables.
- Chill at least 6 hours or overnight.
