Skillet Scramble With Sunny Side-Up Egg
- 5 Baby Potatoes
- 1/4 Onion, Peeled
- 2 stalks Green Onion
- 1/2 Red Pepper, Seeds Removed
- 1/2 Yellow Pepper, Seeds Removed
- 1 Small Tomato
- 1/4 cups Aged Smoked Cheddar, Grated
- 1 Egg
- Chopped Fresh Parsley, For Garnish (optional)
- 2 slices Baguette
- 1. Bring a medium-sized pot of water to a boil. Boil potatoes for about 10 minutes or until fork tender. Then drain them and cut into bite-sized pieces.
- 2. Dice the onion, peppers, tomato and green onion.
- 3. In a medium-sized skillet over medium heat, saute peppers and onions (save the green onions for garnish) until they start to soften.
- 4. Put potatoes in with peppers and onions and saute till golden brown.
- 5. Add tomatoes and grated cheese and take pan off heat.
- 6. In another frying pan over medium heat, cook egg sunny side up.
- 7. Place veggies and potatoes in a bowl, top with egg and sprinkle with chopped green onion and fresh chopped parsley. Serve with a piece of bread.
