Strawberry Yogurt Muffins With Orange Glaze
- 2 cups Whole Wheat Flour
- 1 teaspoon Sea Salt
- 1 teaspoon Baking Soda
- 2 whole Eggs
- 1/2 cups Granulated Sugar
- 1/2 cups Brown Sugar
- 1/2 cups Melted Butter
- 1/2 teaspoons Vanilla Extract
- 1/4 teaspoons Orange Extract
- 1 teaspoon Lemon Juice
- 1-1/4 cup Greek Yogurt, Vanilla Flavored
- 1-1/2 cup Chopped Fresh Strawberries
- 4 Tablespoons Orange Juice
- 2 cups Powdered Sugar
- Preheat your oven to 400 degrees and grease your muffin pan. Or if you use liners that is fine too.
- In a large bowl, combine the flour, salt and baking soda.
- Mix gently, set aside.
- With a mixer, beat the eggs on medium-low and gradually add in sugars. Then slowly add in the butter, extracts and lemon juice
- Into the creamed mixture, alternately add in the flour and yogurt until all is combined and then gently fold in the strawberries.
- Scoop into muffin cups and bake for about 20 minutes.
- For the glaze I mixed 4 tablespoons orange juice and 2 cups powdered sugar and poured it on the muffins after they were a little cooled.
- *My two year old gobbled up two of these muffins!
