Skillet Apple Pancake
- 4 Tablespoons Unsalted Butter
- 1/4 cups Light Brown Sugar, Divided Use
- 2 whole Medium Apples, Peeled, Cored And Cut 1/8 Inch Thick
- 1/2 teaspoons Cinnamon Plus A Pinch, Divided Use
- 5 whole Large Eggs
- 1/2 cups All-purpose Flour
- 1/2 cups Whole Wheat Flour
- 1 cup Milk
- 1/2 teaspoons Vanilla
- 1/4 teaspoons Nutmeg
- 1/8 teaspoons Salt
- 1 teaspoon Confectioners Sugar, For Dusting
- Preheat the oven to 400 F. In a 10-inch cast iron skillet over medium heat, melt the butter and 3 tablespoons of the brown sugar. Add the apple slices and the pinch of cinnamon and cook for 5-7 minutes, stirring occasionally. Remove from heat and spread the apples into an even layer.
- In a medium bowl, whisk together the eggs, flours, milk, vanilla, remaining cinnamon, nutmeg, salt and the remaining tablespoon of brown sugar. Pour batter slowly over the cooked apple mixture.
- Transfer the skillet to the oven and bake until golden brown, set in the center and puffed around the edges, about 15-20 minutes. Remove from oven. Dust with confectioners' sugar and serve immediately.
