No-Sugar Cranberry Relish
- 3 c. fresh or frozen cranberries
- 1 1/2 c. water
- 14 packets Equal (to equal 2 tsp. sugar each)
- 2 pkg. unflavored gelatin
- Put cranberries and water in a large pot and place on stove on "high" until the berries pop.
- If they don't all pop, use a potato masher to crush the ones that did not pop.
- (Use pot lid while cooking.)
- Then cook over a low heat for about 20 minutes without lid.
- Start the timing when the berries start to cook, not when you put the pot on the burner.
- When cooked for 20 minutes, add 14 packets of Equal sweetener (each packet to equal 2 teaspoons sugar) and 2 packages of unflavored, unsweetened gelatin that has been softened in cold water and then melted over hot water.
- Stir this in and put mixture in containers.
- Keep in refrigerator.
- Use as regular cranberry relish.
- Serves 4 to 6.
