Lemon And Garlic Green Beans

  1. In a large pot, bring approximately 5 cups of water to a boil. Add green beans and blanch for about 2 minutes, or until they turn a dark green in color. Remove them from the water with a slotted spoon or kitchen spider. Add green beans to a bowl of ice water to stop them from cooking.
  2. While beans are cooling, make the sauce. In a large skillet, add olive oil, butter and garlic. Cook over medium heat until butter is melted. Add the green beans (first drain them from the ice bath) and red pepper flakes and cook for about 5 minutes, stirring constantly. Add lemon zest and salt. Serve!
