Gingersnap Crusted Fruit Pizza
- FOR THE CRUST:
- 3/4 cups Butter
- 1 cup Sugar
- 1 whole Egg
- 1/4 cups Molasses
- 2-3/4 cups Flour
- 2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1-1/2 teaspoon Cinnamon
- 1/2 teaspoons Ground Ginger

- FOR THE FROSTING:
- 8 ounces, weight Cream Cheese, Softened
- 1 cup Powdered Sugar
- 8 ounces, weight Cool Whip
- Fresh Fruit, For Topping
- Combine the butter, sugar, egg and molasses together until creamy. Add the dry ingredients. Mix completely. Pat the cookie dough into a large silver cookie sheet. Bake in a 350 F oven for 10-15 minutes, until the crust is puffed in the middle. Don't over-bake. That's bad. Once the crust is cool, top with frosting.
- To make the frosting, beat the cream cheese and powdered sugar until combined. Fold in the Cool Whip. Mix until combined. Spread on top of cooled crust and top with your favorite fresh fruit.
