Stuffed Squash
- 4 whole Crookneck Squash
- 1 pound Medium Hot Sausage
- 1 whole Onion, Chopped
- 1/2 sticks Margarine Or Butter
- Black Pepper To Taste
- Salt To Taste
- Tony Cachere Seasoning To Taste
- Cut squash in halves horizontally, keeping matching halves together. Scoop out seeds with a large spoon.
- In a bowl, mix sausage and onion. Fill 1/2 of each squash with sausage and onion mixture.
- Lay each filled half on aluminum foil. Place matching halves back together and add a pat of margarine or butter on top of each squash. Season to taste with salt, pepper and Tony Cachere seasoning.
- Roll aluminum foil around squash tightly. Cook in a baking pan in the oven for about 1 hour at 350 degrees or until sausage is cooked thoroughly. For the grill, place in a disposable aluminum pan on grill for about 1 hour on medium heat.
