Ricotta Protein-Packed Pancakes

  1. Combine eggs, ricotta cheese, flour, baking powder, oil, salt and vanilla in a large bowl. Whisk.
  2. Heat a skillet/griddle on medium and grease with butter.
  3. Spoon batter (about a quarter cup) onto the skillet/griddle. Add your toppings if you are doing so. Cook until golden brown (a couple minutes) and flip. Cook the other side until done. Remove cooked pancakes to a plate. Finish cooking the rest of the batter.
