Ricotta Protein-Packed Pancakes
- 6 Eggs
- 1 cup Ricotta
- 1/2 cups Flour Or Whole Wheat Pastry Flour
- 3/4 teaspoons Baking Powder
- 2 Tablespoons Vegetable Oil
- 1/2 teaspoons Salt
- 1/2 teaspoons Vanilla
- Butter For Griddle
- Blueberries Or Thinly Sliced Bananas (optional)
- Mashed Bananas (optional)
- Maple Syrup, For Topping
- Combine eggs, ricotta cheese, flour, baking powder, oil, salt and vanilla in a large bowl. Whisk.
- Heat a skillet/griddle on medium and grease with butter.
- Spoon batter (about a quarter cup) onto the skillet/griddle. Add your toppings if you are doing so. Cook until golden brown (a couple minutes) and flip. Cook the other side until done. Remove cooked pancakes to a plate. Finish cooking the rest of the batter.
