Sugar Free Peach Cobbler

  1. Preheat oven to 350u0b0F.
  2. In a bowl combine the peaches, cinnamon, flour, lemon zest and juice, and Splenda. Dump out this mixture in a 9x13 casserole dish. On top of the peach mixture, spread out the dry cake mix so that it completely covers the top of the peaches. Next, pour the Diet Coke (or any diet soda for that matter) over the top of the dry cake mix. Make sure that there are no dry spots of cake mix showing.
  3. Bake at 350u0b0F for 40-45 until the top is dry and springy to the touch, and the fruit is bubbling around the sides.
  4. Serve warm with either sugar-free Cool Whip or no sugar added vanilla ice cream (I like BlueBell). Each serving of cobbler is 145 calories.
  5. Enjoy!
