Arroz Con Pollo Burrito

  1. Combine chicken, taco spices and 3/4 cup water in large skillet.
  2. Bring to a boil; reduce heat.
  3. Simmer uncovered 10 minutes.
  4. Remove chicken mixture; set aside.
  5. In same skillet, saute rice in hot oil until golden.
  6. Add remaining 2 1/2 cups water, tomato sauce and lemon pepper seasoning.
  7. Bring to a boil; reduce heat.
  8. Cover; simmer 20 minutes.
  9. Stir in chicken mixture, tomato and onion.
  10. Blend well.
  11. Heat 5 minutes.
  12. Place 1/2 cup filling on each tortilla.
  13. Fold in sides; roll to enclose filling. Place burritos, seam side down on baking sheet.
  14. Sprinkle with cheese.
  15. Heat in 350u0b0 oven 5 minutes to melt cheese.
