Christmas Snow Caps

  1. Beat
  2. egg
  3. whites
  4. to
  5. which
  6. cream
  7. of tartar has been added, until
  8. stiff, but not dry.
  9. Add peppermint extract and salt.
  10. Add sugar
  11. gradually
  12. and
  13. beat until well blended and smooth.
  14. Save some
  15. of
  16. the
  17. candied cherries for topping the cookies, but
  18. add the
  19. rest, a few at a time, to egg mixture. Cover
  20. cookie
  21. sheet with
  22. plain
  23. brown
  24. paper.
  25. Drop
  26. cookie mixture by teaspoonfuls onto the paper.
  27. Bake at 325u0b0 about 20 minutes.
  28. Let
  29. stand
  30. a few minutes after removing from oven, then
  31. remove
  32. warm cookies with a spatula and place on a rack. Top with remaining cherries. Yield:
  33. about 30 cookies.
