Christmas Snow Caps
- 3 egg whites
- 1/8 tsp. cream of tartar
- 1/2 tsp. peppermint extract
- dash of salt
- 3/4 c. fine granulated sugar
- 2/3 c. diced, candied cherries
- Beat
- egg
- whites
- to
- which
- cream
- of tartar has been added, until
- stiff, but not dry.
- Add peppermint extract and salt.
- Add sugar
- gradually
- and
- beat until well blended and smooth.
- Save some
- of
- the
- candied cherries for topping the cookies, but
- add the
- rest, a few at a time, to egg mixture. Cover
- cookie
- sheet with
- plain
- brown
- paper.
- Drop
- cookie mixture by teaspoonfuls onto the paper.
- Bake at 325u0b0 about 20 minutes.
- Let
- stand
- a few minutes after removing from oven, then
- remove
- warm cookies with a spatula and place on a rack. Top with remaining cherries. Yield:
- about 30 cookies.
