Summer Cous Cous
- 1 cup Water
- 1 cup Whole Wheat Cous Cous
- 1/4 cups Extra Virgin Olive Oil
- 1 whole Lemon, Juiced And Zested
- 1 Tablespoon Fresh Parsley, Chopped
- 1 cup Diced Tomato
- 1 whole Green Onion, Chopped
- 1 whole Avocado, diced
- 1 clove Garlic, Minced
- 1/2 teaspoons Salt, More To Tastse
- 1/2 teaspoons Pepper, More To Taste
- 2 Tablespoons Freshly Grated Parmesan Cheese
- Bring 1 cup of salted water to boil. Turn off the heat, add the cous cous and stir. Cover and let sit for five minutes.
- Meanwhile, whisk the olive oil, lemon juice and parsley in a medium bowl. Add the tomato, green onion, avocado and garlic and mix.
- When the cous cous is ready, add it to the other ingredients and mix well. Add salt and pepper to taste and garnish with Parmesan cheese and lemon zest (if desired).
- This is best served at room temperature or chilled but can be served warm as well.
