Meringue Cookies

  1. In a large bowl, beat the egg whites with the salt until they are frothy.
  2. Add the vinegar and beat the whites until they hold soft peaks.
  3. Beat in the granulated sugar, a little at a time, and food coloring, if desired, until it holds stiff, glossy peaks. Beat in the liqueur and chocolate chips, if desired.
  4. Spoon level tablespoons of mixture 2 inches apart onto baking sheets lined with foil, shiny side down.
  5. Sift the confectioners sugar lightly over meringues and bake in a preheated 300u0b0 oven for 35 to 45 minutes.
  6. Turn off oven and leave the meringues in the oven with the door closed for about 4 hours or until they are firm.
  7. Let the meringues cool on racks and store them in airtight containers. Makes about 45 cookies.
