Summer Cranberry Chicken Pasta Salad
- 1/4 cups Confectioners Sugar
- 2 Tablespoons Champagne Vinegar
- 2 cups Mayonnaise (regular, Not Low Fat)
- 2 Tablespoons Water
- 2 Tablespoons Poppy Seeds
- 2 teaspoons Salt
- Ground Black Pepper To Taste
- 1 pound Rotini Or Bow Tie Pasta, Cooked, Rinsed And Cooled
- 2 cups Chicken Breast, Cooked And Cut Into Cubes
- 1 cup Sweetened Dried Cranberries (craisins)
- 1/2 whole Small, Sweet Onion (like Vidalia), Finely Diced
- 4 stalks Celery, Diced
- 1 cup Sliced Or Slivered Almonds
- First, prepare the dressing by combining the sugar, vinegar, mayo, water, poppy seeds, salt and pepper in a large bowl. Whisk to combine. Set aside.
- In a large bowl, combine the cooked pasta, cubed chicken, cranberries, onion, celery and almonds. Add dressing and toss to coat.
- Chill salad to blend flavors. Serve on a bed of lettuce with soft rolls or croissants, if desired.
