Summer Cranberry Chicken Pasta Salad

  1. First, prepare the dressing by combining the sugar, vinegar, mayo, water, poppy seeds, salt and pepper in a large bowl. Whisk to combine. Set aside.
  2. In a large bowl, combine the cooked pasta, cubed chicken, cranberries, onion, celery and almonds. Add dressing and toss to coat.
  3. Chill salad to blend flavors. Serve on a bed of lettuce with soft rolls or croissants, if desired.
