Seafood Gumbo
- 1/2 stick margarine
- 3 Tbsp. flour
- 2 large onions, chopped
- 1/4 tsp. garlic powder
- 2 (16 oz.) cans tomatoes
- 1 (16 oz.) can chicken broth
- 2 c. water
- 1 tsp. salt
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. Tabasco sauce
- 1 box frozen, sliced okra
- 1 lb. cleaned shrimp
- 1 pt. oysters
- 2 generous Tbsp. file powder
- cooked rice
- Melt margarine in heavy Dutch oven.
- Stir in flour.
- Cook over low heat until dark golden brown.
- Stir constantly.
- Add onion and garlic.
- Cook until onion is tender, stirring frequently.
- Break up canned tomatoes and add with liquid to Dutch oven.
- Add chicken broth, water, salt, Worcestershire sauce and Tabasco sauce.
- Stir in okra and simmer until okra is tender, approximately 30 minutes. Add shrimp and oysters.
- Cook until shrimp curl and turn pink and the oysters curl on edges.
- Remove from heat and stir in file powder to thicken.
- Serve hot over cooked rice.
