Summer Veggie Salad With Feta
- 1/2 pints Cherry Tomatoes
- 1 whole Avocado, diced
- 1 whole Small Red Onion, Sliced Into Half Moons
- 1 whole Cucumber, Peeled, Halved And Sliced
- 1 Tablespoon Lemon Juice
- 2 Tablespoons Olive Oil
- 1/4 teaspoons Salt
- 1/8 teaspoons Freshly Ground Black Pepper
- 3 ounces, weight Feta Cheese, Cubed Or Crumbled
- Add all of the vegetables to a medium-sized bowl. Drizzle the lemon juice and olive oil over top. Add the salt and pepper. Toss to coat. Top with the feta and enjoy!
- *To dice the avocado, I cut it in half lengthwise. Hit the pit hard with a sharp knife and pull up with the knife to remove. Take a paring knife and cut a grid without breaking through the skin. Take the knife between the meat and the skin to remove the diced pieces. Repeat with the other half.
