Roasted Garlic Green Bean Salad
- FOR THE SALAD:
- 1 pound Fresh Green Beans, Trimmed
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Garlic Powder
- Salt And Pepper
- 1 cup Cherry Tomatoes, Quartered
- 3 Tablespoons Feta Cheese, Crumbled
- FOR THE DRESSING:
- 3 Tablespoons Olive Oil
- 2 teaspoons Fresh Lemon Juice
- 1/4 teaspoons Garlic Powder
- 1 dash Pepper
- Preheat oven to 400u0b0F.
- Spread green beans on a large baking tray in an even layer. Drizzle olive oil over top and sprinkle with garlic powder, salt, and pepper. Lightly toss to coat. Bake for 12-15 minutes or until tender but still slightly crisp.
- As green beans are roasting, prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, and pepper. Pour over green beans and top with cherry tomatoes and feta.
- Serve immediately or refrigerate until ready to serve. Enjoy!
