Ice Cream Sandwich Cookies
- FOR THE COOKIES:
- 2 cups Butter, Softened
- 2 cups White Sugar
- 2 cups Packed Brown Sugar
- 4 whole Eggs
- 4 teaspoons Vanilla Extract
- 2 teaspoons Baking Soda
- 1 teaspoon Salt
- 6 cups All-purpose Flour
- 4 cups Semi-Sweet Chocolate Chips
- 3/4 cups Cocoa Powder
- FOR THE SANDWICHES:
- 1 pint Vanilla Ice Cream
- 1 pint Mint Ice Cream
- Preheat oven to 350u0b0F.
- You are going to make two different types of cookies, so divide the cookie ingredients in half (except the cocoa powder).
- For the first batch of cookies: In a mixing bowl using an electric mixer, cream together half of the butter, white sugar, and brown sugar until smooth. Beat in half of the eggs one at a time, then stir in half of the vanilla. Add baking soda and salt. Stir in flour and chocolate chips.
- For the chocolate chocolate chip cookies: In a mixing bowl using an electric mixer, cream together remaining half of the butter, white sugar, and brown sugar until smooth. Mix in cocoa powder. Beat in half of the eggs one at a time, then stir in half of the vanilla. Add baking soda and salt. Stir in flour and chocolate chips.
- Drop dough by large spoonfuls onto un-greased baking pans, leaving about 2 inches between them. Bake for about 10 - 12 minutes in the preheated oven, or until edges are nicely browned. Remove from oven and allow them to cool before making the sandwiches.
- Take the ice cream out of the freezer 30 minutes before assembling the sandwiches.
- Use a combination of the cookies and a combination of the ice cream to make the sandwiches. Add about 1/3 to 1/2 cup of ice cream for each sandwich cookie. Place assembled sandwiches back in the freezer for at least 30 minutes. Serve and enjoy!
