Boursin Bacon Egg Bites
- 6 pieces Bacon
- 1 Large Potato, Chopped Into 1/4" Cubes
- 2 Eggs
- 2 Tablespoons Cream
- 2 Tablespoons Boursin Herb And Garlic Cheese
- 2 Tablespoons Shredded Parmesan Cheese
- 1/4 teaspoons Ground Pepper
- Preheat oven to 350 F. Prepare a muffin tray by greasing the edges of 6 cups or inserting 6 silicone liners.
- Cut raw bacon pieces in half. Insert two half pieces of bacon into each muffin tin cup, lining the sides, forming a bacon circle and allowing the ends to overlap each other.
- Add potato cubes to the bottom of each bacon cup, filling halfway to the top. Bake for 40-45 minutes, until bacon and potatoes are almost cooked through. Remove from the oven and set aside.
- In the meantime, in a medium sized bowl mix together eggs, cream, Boursin, Parmesan cheese and pepper.
- Pour the egg mixture over the top of each potato cup. Bake another 15-20 minutes, until egg muffins are puffy and slightly golden brown
