Hot ‘N Spicy Skillet Baked Sausage Frittata
- 10 whole Large Eggs, Beaten
- 2 Tablespoons Half-and-Half Or Light Cream
- 1 teaspoon Black Pepper
- 1/2 teaspoons Sea Salt
- 2 Tablespoons Sweet Cream Butter
- 1/2 whole White Onion, Diced
- 1/2 whole Bell Pepper, Any Color, Stem And Seeds Removed, Diced
- 12 ounces, weight Hot Breakfast Sausage
- 1 teaspoon Ground Sage
- 1 teaspoon Ground Cumin
- 1/2 teaspoons Smoked Paprika
- Your Favorite Hot Sauce (optional)
- Sour Cream And Chives, For Garnish (optional)
- Preheat oven to 375u0b0F.
- In a large bowl, add eggs, half-and-half, salt, and black pepper. Whisk well, set aside.
- Using a large 12-inch cast iron skillet (or another large skillet) over medium heat, melt butter. Add onions and bell peppers and saute several minutes. Add crumbled hot sausage, sage, cumin, and smoked paprika, stirring to break sausage up into pieces. Cook 8-10 minutes until sausage is fully cooked.
- Add egg mixture and gently fold into sausage. Place skillet into the oven and bake 30 minutes or until golden brown.
- Remove from oven, slice into triangles, and serve. We love this with a side of fresh fruit and corn bread muffins. Enjoy!
