Super Banana Muffins
- FOR THE MUFFINS:
- 1-1/2 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 teaspoons Cinnamon
- 3 whole Bananas, Mashed
- 3/4 cups Sugar Or Splenda
- 1 whole Egg, Beaten
- 1/3 cups Vegetable Oil Or Applesauce
- 1 teaspoon Vanilla
- FOR THE STREUSEL TOPPING:
- 1/3 cups Brown Sugar
- 2 Tablespoons Flour
- 1/8 teaspoons Cinnamon
- 1 Tablespoon Butter, Cubed
- 1. Preheat oven 375u0b0F. Line a muffin pan with liners or grease and flour.
- 2. Mix together the dry ingredients: flour, baking powder, baking soda, salt and cinnamon.
- 3. Mix together in a separate bowl the wet ingredients: mashed banana, sugar, egg, oil (or applesauce) and vanilla.
- 4. Add wet ingredients to dry ingredients and stir just until barely combined.
- 5. Scoop into the muffin tin using a 3-tablespoon scoop or simply fill until 3/4 full.
- 6. For the streusel topping, in a small bowl, mix together the brown sugar, flour and cinnamon. Mix in the butter with your fingers until the mixture resembles fine crumbs. Scoop about 1 tablespoon of streusel topping onto each muffin.
- 7. Bake 17-20 minutes.
