Baked Chicken And Pepper
- 6 or 8 boneless chicken breast halves
- 3 c. bell pepper, cut into strips
- 1/2 c. thin sliced red onion
- 1 Tbsp. vegetable oil
- 1 c. salsa sauce (medium or hot)
- 1/2 tsp. chili powder
- 1/2 tsp. ground cumin
- 1 c. (4 oz.) shredded Cheddar or Monterey Jack cheese
- chopped cilantro for decoration (optional)
- Place single layer of chicken in greased 9 x 13-inch baking dish.
- Sprinkle with salt.
- In 10-inch skillet, saute pepper and onion in oil until tender.
- Stir in salsa, chili powder and cumin. Spoon over chicken.
- Cover tightly with foil.
- Bake at 350u0b0 for 30 minutes.
- Remove foil.
- Top with cheese.
- Bake, uncovered, until cheese melts.
- Top with cilantro.
- Serve with salsa.
