Super Fast Chicken And Bean Soup
- 1 can (14 Oz. Size) Corn, Drained
- 2 cans Rotel Tomatoes, 10 Ounce Cans
- 1 can (15 Oz. Size) Refried Beans
- 1 can (16 oz. size) Whole Pinto Beans, Drained
- 1 box Chicken Stock (32 Ounce Box)
- 2 whole Cooked Chicken Breasts, Shredded
- Optional Garnishes: Sour Cream, Cilantro, Green Onions, Cheese, Etc
- Add all ingredients into a large soup pot and heat until all ingredients are heated through. When you are ready to serve, pour into serving bowls and add any garnishes you wish.
- Garnishes:
- Corn Chips
- Sour cream (I use greek yogurt)
- Cilantro
- Diced Green onions
- Cheese
- *I use leftovers from baked chicken, or a rotisserie. You could quickly braise uncooked breasts in stock, cool and shred, and then add other ingredients.
