Surprise Package Cookies
- 1 cup Butter (no Substitute)
- 1 cup White Sugar
- 1/2 cups Packed Brown Sugar
- 2 Whole Eggs
- 1 teaspoon Vanilla Extract
- 3 cups All-purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 56 Andes Mint Chocolates, Divided
- 1. Cream butter and sugars until light and fluffy.
- 2. Add eggs, one at a time, mixing after each addition. Mix in vanilla extract.
- 3. Combine dry ingredients in a separate bowl and mix well.
- 4. Slowly add dry mixture to butter/sugar mixture. It will become difficult to add, so you will need to use your hands for last 1/2 cup or so of flour.
- 5. Cover and chill for 2 hours or until easy to handle.
- 6. Unwrap mints. Place 42 in a bowl and set the remainder aside to melt for drizzle for finished cookies. Preheat oven to 375u0b0F.
- 7. Divide dough into 42 pieces. Wrap a piece of dough around a mint to cover completely.
- 8. Place on greased cookie sheet and bake at 375u0b0F for 10-12 minutes or until set and bottom is lightly golden.
- 9. Melt remainder of mints in a microwaveable bowl. Using a spoon, drizzle over top of baked cookies.
