Grilled Romaine-Kale-Peach Summer Salad
- FOR THE GRILLED SALAD:
- 1/2 bunches Romaine Lettuce
- 1/2 heads Kale
- Olive Oil, For Drizzling
- 2 whole Ripe Peaches, Halved, Pitted
- 2 Tablespoons Pure Honey
- 1/4 cups Grated Mozzarella Cheese
- FOR THE DRESSING:
- 1 Tablespoon Canola Oil
- 1 teaspoon Red Wine Vinegar
- 1 teaspoon Lemon Juice
- Salt And Pepper, to taste
- We use an outside grill but you can use an inside grill or griddle pan liberally coated with cooking spray. Set grill to medium heat. Drizzle olive oil on romaine and kale and place on the grill, just a few minutes on each side. Remove from heat.
- Coat peach halves with honey and grill several minutes. Remove from heat.
- In a small bowl, combine dressing ingredients and stir well. Set aside.
- Chop grilled romaine and kale into bite size pieces and place in a bowl. Slice grilled peaches and add to mixing bowl, lightly tossing. Add dressing, mozzarella cheese, and give it a final gentle toss. Plate and serve.
